A highly sought-after Champagne house located in Côte de Bar, Cedric Bouchard Roses de Jeanne is one of the most remarkable names to follow. Founder of the house Cedric Bouchard was born in a winemaking family, and after his career as a Sommelier and Caviste in Paris, he decided to move back to Celles-sur-Ource in 2000 and start his own label.
Cedric produced his champagne with a more Burgundian than Champenois approach, and insisted on a revolutionary philosophy of single vineyard, single variety and single vintage, without any blending. He started with just one hectare of the vineyard from his father in Aube, Bouchard farmed the vineyards with Pinot Noir organically, with a focus on the natural viticulture. The grapes are all harvested and sorted by hand, and fermented in indigenous yeasts. Once the second fermentation is completed in bottle, the Champagnes are corked without any dosage. Bouchard's pursuit of low yields also helps create the concentrated, densely flavoured Champagnes with the palate almost like red wine. The unusual creamy texture along with the elegant harmony and finesse also demonstrate the unique characteristics and richness of the champagne.
