Jérôme Bourgeois-Diaz, a 4th generation vigneron, crafts exceptional Champagne in Crouttes-sur-Marne, located between Paris and Reims. Initially in industrial sales, he took over the family vineyard in 2001. He farms 7 hectares of vines, averaging 35 years old, with 3 hectares of Pinot Meunier, 2 hectares of Pinot Noir, and 2 hectares of Chardonnay, all in the region's renowned clay and limestone soils. Jérôme practices biodynamic farming, certified by Demeter since 2015, prohibiting herbicides and fungicides.
