"Excellent Volume & Richness" Philippe Pacalet Moulin-A-Vent 2015 at Only HK$1,100/Mag!
Born into a family of winemakers with history dating back to 1780, Philippe Pacalet is the nephew of Marcel Lapierre, a legendary natural winemaker in Beaujolais, and he studied oenology, majoring in organic winemaking. Despite coming from a family with rich history in winemaking, Philippe does not own any land and he opted to rent select vineyards around the Cote de Beaune and Cote de Nuits when he began producing his own wines. Though his wine business is a success, he remains as a vintner without vineyards of his own and produces over two dozen highly sought after wines from Burgundy as well as Beaujolais and Northern Rhone.
Philippe only uses grapes from vineyards that meet his specific requirements and vinifies them at his winery in the heart of Beaune. He believes that stems are an integral part of the winemaking process so he never de-stems his grapes, and he is adamant about achieving the pure expression of terroir so he ensures that anything that would obscure that expression will not be included in the vinification process. He personally oversees every step in the production of his wines and intervenes as little as possible as his philosophy is that nature shall govern the production. The resulting wines are incredibly aromatic and fresh, and are hailed as some of the most elegant and pure expressions of Burgundy wines time after time. In a review by Revue du Vin de France Guide Vert, they commented that Philippe's wines "not only speak of their terroir, they have incredible complexity, are delicious even in their youth and age perfectly."

There is excellent volume and richness to the concentrated middle weight flavors that possess first-rate complexity on the firmly structured and impressively persistent finish. This fine effort is built-to-age and will certainly need at least a few years first.
