An industrial mechanical engineer who studied viticulture and oenology then became one of the most interesting artisanal Champagne growers, Franck Pascal cultivates 7 ha. of vineyards in the Vallée de la Marne. He has started biodynamic practices since 2002, nowadays Franck harvests about 60% Pinot Meunier, 20% Pinot Noir and 20% Chardonnay. He keeps the yields extremely low, vinifies in old wooden vats and only indigenous yeasts are used. This results in some pure, highly finessed Champagne with solid mineriality influences.
