Domaine Michel Caillot was established in the 1960s by Roger Caillot, Michel’s father. Michel, the nephew of Pierre Morey (the ex-winemaker at Domaine Leflaive), started working in the family Domaine in the 1980s and then took full charge from 1995. The domaine owns 14ha of vineyards in which most of their whites are located in Meursault with some others in Puligny-Montrachet, Batard-Montrachet, and Santenay; while their reds are located in Pommard, Volnay, Beaune and Monthelie. Michel applies an organic approach in the vineyards and does not use any synthetic pesticides or fertilizers and is committed to the principles of non-interventionist winemaking. He uses whole clusters and natural, wild yeasts in the fermentation process, and never uses pumps for racking or bottling. He also applies a full 24 months of elevage, with both whites and reds kept 12 months in cask and another 12 months in stainless, to prevent over-oaking or drying them out; and except for the 1er Cru and Grand Cru that receive 50-70% new barrels, the whites are normally fined without any filtering and aged in 30% new oak barrel, whereas the reds are neither fined nor filtered and aged in 30-60% of new barrels.

The resulting white wines are pure, clean with lemon-citrusy notes combined with fascinating minerality of the soil and a fine, creamy texture followed by a crisp, long and complex finish. On the other hand, the reds are generally smooth and supple with pure berries and cherry aromas accompanied with soft, round tannins with lush and ripe fruits on the palate.
