Fanny Sabre has quickly become one of the most engaging natural winemaker in Burgundy. She took over her family estate in Pommard in the mid-2000s and shaping it into a reference for pure and vibrant styles.She farms organically with a light touch in the cellar, relying on indigenous yeasts, minimal sulphur and gentle élevage to let each site speak clearly in the glass. The result is a range of wines that feel effortless and precise at the same time, with a seductive mix of succulent fruit, fine tannins and lifted aromatics that has made them favourites on the most dynamic restaurant lists.
A key chapter in Fanny’s story is her close relationship with Philippe Pacalet, who joined the domaine after her father’s passing and spent around three years mentoring her through every detail of organic viticulture and natural winemaking. Pacalet had turned down a cellar position at Domaine de la Romanée Conti to focus on his own project, yet still chose to invest his time at the Sabre estate, gradually stepping back as Fanny’s confidence and vision took shape and finally leaving her fully in charge from the 2005 vintage.
