La Closerie was established in 1987 by Jérôme Prévost, who inherited the 2 ha vineyards from his grandmother which is known as Les Béguines. Jérôme's grandmother didn’t cultivate the vines herself but rented them out instead. Jérôme then worked on the vines himself as he took over, and sold his grapes out to the negoce, but a few years later, he considered producing his own wines. As he did not have any winemaking experience, he decided to work at Jacques Selosse under Anselme Selosse as a trainee. With Anselme's encouragement, he started working on his own wines from 1998 and released his first wine in 2001, in which Selosse shared a corner of his cellar in Avize as Jérôme did not have facilities of his own back then. It was not until 2002 that he acquired his own cellar in Gueux.

One of the star productions is the Les Beguines which is made from a single variety (Pinot Meunier), single vineyard and a single vintage. The grapes on Les Beguines are over 50 years old and the vineyard is cultivated using the biodynamic approach. Jérôme emphasised the natural rhythms of the yard, in which no chemical pesticides or herbicides are used, and no chaptalisation in his wine. His wines contain the minimum amount of sulfur, without any fining, filtering or solid-stabilization process. The bottles are all disgorged at once, then stored for 3 years before release. The dosage is 2.5g/bottle. The resulting cuvee is soft and creamy, but also complex, delicate and refined. This is the champagne which serious drinkers must experience. A variation from the Les Beguines is the LC18 which is made with Meunier grapes from Les Beguines (20%) and a combination of other varieties.

Annual production of only about 13,000 bottles against such a strong demand from highly sophisticated restaurants/bars in Paris and wine enthusiasts so it is not easy to secure in markets abroad.
