Theo Dancer developed himself by shadowing his father Vincent Dancer at the domaine. Theo also started a new project under his name by carefully picking the right grape growers for his innovation, that he used to experiment with uncommon grapes such as Savagnin, Pinot Gris, Aligote, Gamay, etc. The philosophy of the new project is to keep everything minimal, with native yeasts, no enzymes or acids, natural malolactic fermentation, no batonnage, fining or filtering.
