Julien Prélat is a small grower estate in Celles sur Ource, deep in Champagne's Côte des Bar. Julien is the fourth generation in his family to farm these vines, but the first to bottle under his own name, founding the domain in 2000 rather than selling his fruit to the big houses. He and his wife Karine farm just 7 hectares of Kimmeridgian limestone, the same fossil rich soil that defines Chablis, and it shows through in every glass as a distinct minerality and salinity rarely found in the region.
 
His philosophy is uncompromising: no blending, ever. Each cuvée is a single vintage, from a single plot, made from a single grape variety, letting one harvest and one parcel speak entirely for themselves. Production is still tiny at around 30,000 bottles a year.
