Elise Bougy is a passionate and young female winemaker, who has a large interest in rare grapes and unique combinations but at the same time, also maintains complete respect for the terroir hence follows the principles of organic farming and use of biodynamic practices. She inherited 3 hectares of her family domaine, and there are two-thirds of the vineyards in Les Mesneux and Montagne de Reims 1er Cru, with one-third in Mesnil-sur-Oger Grand Cru. She has great passion and philosophy for winemaking and was one of the winners of the Prix des Artisanes organized by ELLE and supported by LVMH Group this year which recognizes the exceptional savoir-faire of talented women artisans in craft métiers requiring exceptional skills in the fields of Fashion, Design, Wines & Spirits and the Preservation of French Heritage.

Elise crafts several Champagnes and among them are a Blanc de Noirs and Blanc de Blancs that we'd like to introduce and offer to you today. The Blanc de Noirs is a Champagne made from 50% Pinot Noir and 50% Meunier from Le Mont-Chainqueux 1er Cru and was aged in the barrels for 7 months. Without any final dosage added, this champagne maintains a unique terroir combined of a chalky and loamy-clayey layer and the grapes benefit from a south-eastern exposure, showing fruit and woody notes. As for the Blanc de Blancs, it was created from Chatillon de Haut using 100% Chardonnay and was aged in barrels and stainless steel tanks for 10 months. With the dosage of 1.5g (Extra Brut), it perfectly shows the terroir of pure chalk and iodine and is crossed by silty-chalky collusions. This Champagne at the end expresses an ordinary fruity and mineral note. Both the Blanc de Noirs and Blanc de Blancs only have a production of 1,500 bottles per year - so rare that they are not even listed on Wine-searcher!
