2021 Disgorged Champagne from Frederic Savart, from HK$550 per bt

Champagne Savart started to produce Champane in 1970s by Daniel Savart and now passed the ruin to Frédéric Savart who is the son of Daniel. Frédéric Savart made a lot of changes in the house and worked actively in the vineyards to give expression of the purest nature from the Champagne. They own about 6 hectares of vineyards in Montagne de Reims and Villers-aux-Noeuds, all of these vineyards are classified as Premier Cru which 4 hectares are Pinot Noir and 2 hectares are Chardonnay.
 
A collaboration between Frédéric Savart and Dremont Pere & Fils, the Éphémère cuvée is a limited release which Frédéric Savart selected a few outstanding plots of vineyard to create a special cuvee. We are delighted to offer a parcel of “011” edition, 100% Pinot Noir from premier cru vineyards in Petite Montagne de Reims, the base wine is from 2016 harvest, stayed with lees for over 3 years and disgorged in 2021.
