Salon is undoubtedly considered to be the top echelon of Champagne by many wine connoisseurs around the world, yet it is so rare that not many people have had the chance to taste this quintessential Champagne. A tiny house on the Cote des Blanc, they make just only one Cuvee with 100% of its Chardonnay grapes coming from the Grand Cru-class Le Mesnil vineyard in Le Mesnil-sur-Oger, and is only made in the best vintages (the other vintages go into Champagne Delamotte); and is aged for relatively longer periods of up to a decade in the bottle before they are released.

The 2007 Salon is gorgeous. Weightless, delicate and understated, the 2007 is all class. Today, the 2007 reminds me of the 2004 in its bright, citrus and floral-infused profile, but with a bit more creaminess, mid-palate depth and softer contours, all of which will make the 2007 easy to drink with minimal cellaring. Next to the 2006, the 2007 is quite a bit fresher and more delineated, with none of exuberance, power of tropically-leaning overtones found in its younger sibling. At this stage, the 2007 is a bit inward and closed in on itself. Then again, it is Salon. This is another terrific showing from Salon and the team headed by President Didier Depond. Dosage is 5 grams per liter.

I wanted to start lunch with an approachable vintage of the Cuvée S. The 1999 fits the bill perfectly. Mature aromatics and a svelte figure are immediately appealing. Crushed leaves, chamomile, marzipan and almond show lovely aromatic and flavor development. Medium in body and wonderfully complex, the 1999 really blossoms with food.
