Unlike many winemakers with deep family roots in viticulture, Frédéric Cossard came from a family in the dairy business. He was originally destined to take over his father’s dairy company, but his growing passion for wine led him down a different path. After a decade in the wine trade, he founded his own domaine in 1996 and began producing wine under his own name.
 
A pioneer in natural winemaking, Frédéric has worked organically from the very beginning—eschewing sulfur dioxide, relying on native yeast fermentations, and favoring long macerations. With around 10 hectares of vineyards spread across several Burgundy appellations, he has built a stellar reputation for creating wines that are elegant, pure, and expressive, yet remain accessibly priced. In addition to his own domaine holdings, Frédéric also operates as a négociant, working with some of Burgundy’s most esteemed vineyards. His wines are released under two labels: “Frédéric Cossard” for the top-tier cuvées and “Domaine de Chassorney” for the rest of the range.
 
Since 2022, the winemaking has transitioned to a new generation under the direction of new winemaker Aurélien Verdet , who was trained in Domaine David Duband and also manages his own domaine. Aurélien continues to uphold Cossard’s natural philosophy and meticulous craftsmanship, while bringing fresh energy and subtle evolution to the style.
