Initially studying Economics and German Tax Law, Bastian Wolber soon discovered his true passion for winemaking, inspired by his brother Christoph, co-founder of the Wasenhaus winery in Baden, Germany. Starting in 2013, Bastian gained practical experience in Burgundy at Domaine Leflaive, then worked harvests in Mosel and Alsace. He deepened his knowledge of organic and biodynamic viticulture and minimal intervention winemaking with natural wine pioneer Jean-François Ganevat.
In 2019, a skateboarding accident broke his hand during harvest, preventing cellar work. This led him to start his own nĂŠgociant project, Laisse Tomber, using organically farmed grapes from France and Germany, vinified at Wasenhaus. The name reflects both his accident and his familyâs equestrian roots.
Bastianâs wines emphasize freshness, energy, and purity, using whole-cluster carbonic maceration, ambient yeast fermentation, no fining or filtration, and minimal sulfur at bottling. His vineyards follow organic and biodynamic principles, sourcing grapes from trusted friends across Burgundy, Jura, Alsace, and Baden.
Since 2020, Bastian has been based in Volnay, Burgundy, sharing a winery with other natural winemakers and studying oenology at the UniversitÊ de Bourgogne, continuing to refine his craft alongside Jean-Yves Bizot.
