Like Burgundy, there is a new wave in Champagne when the young generation takes over their families’ works with innovative ideas. Fabian Daviaux who is the seventh generation of the family to be a grower and winemaker in Chavot-Courcourt, is dedicated to make a big turnaround to his family business.
 
The estate was created in 1946 with a tiny 5 hectares of vines which Fabian decided to practice under organic practices. He also uses indigenous yeast, adds no sulfur at bottling, no clarification, and zero dosage, which are rare in Champagne who practices all of these consistently. The style is pure, transparent and fresh.
