Domaine François Carillon is one of Puligny-Montrachet’s most respected family estates, carrying a lineage in the village that goes back to the 16th century and taking its modern form in 2010 when François Carillon began bottling under his own name after the split of the family domaine.

The winemaking is built on a simple idea: protect the quality already achieved in the vineyard and interfere as little as possible in the cellar. The estate farms with ploughing instead of weedkillers, controls yields carefully, and harvests by hand, often early in the morning so the grapes arrive cool and fresh. In the cellar, the fruit is pressed as gently as possible, then fermented and aged traditionally in French oak for around 12 months, with very limited new oak (10-15%) so the wines stay focused, mineral, and transparent to site. The overall style is polished but not heavy, with balance, precision, and a subtle richness that comes more from ripe fruit and fine terroir than from winemaking manipulation.

We have sampled a bottle of Puligny-Montrachet Le Clos du Vieux Chateau Monopole 2023 and it was impressive. With a balanced profile of acidity and structure, this is a classic Chardonnay with aging potential. Fresh and bright aromas of just sliced citrus, various white-fleshed fruit and a floral top note lead to appealingly textured, intense and solidly constituted flavors that possess good size and weight, all wrapped in a balanced and lingering finish. This does however need to develop better depth so a few years of cellaring are recommended.
