Romain Hénin is a rising star in the world of champagne making. Like many of his contemporaries, he graduated from the wine school in Avize and honed his skills at Henri Giraud in Ay for a few years. Since 2016, he has been crafting his own champagne from a modest 1.2-hectare plot. In 2021, he took full control of the family estate, succeeding his talented father, Pascal Hénin. The estate is located in Ay, Vallée de la Marne.
Champagne Ullens represents a unique story in Champagne - a new domaine established by Belgian-born architect Maxime Ullens and his wife Anna in 2012. They purchased Domaine de Marzilly in the Montagne de Reims, initially intending to renovate the property. Maxime's growing interest in winemaking led him to study viticulture and begin producing Champagne. The domaine includes a rare ungrafted vineyard and additional parcels in 'La Petite Montagne.' Their production focuses on Pinot Meunier (80%) and Chardonnay (20%), with a total of four hectares under cultivation. Maxime adheres to organic farming principles and emphasizes extended aging for his wines.
Jérôme Bourgeois-Diaz, a 4th generation vigneron, crafts exceptional Champagne in Crouttes-sur-Marne, located between Paris and Reims. Initially in industrial sales, he took over the family vineyard in 2001. He farms 7 hectares of vines, averaging 35 years old, with 3 hectares of Pinot Meunier, 2 hectares of Pinot Noir, and 2 hectares of Chardonnay, all in the region's renowned clay and limestone soils. Jérôme practices biodynamic farming, certified by Demeter since 2015, prohibiting herbicides and fungicides. His vineyards, interspersed with native plants, are hand-harvested according to Pierre Masson’s lunar calendar. In the cellar, Jérôme uses a traditional Coquard Champagne press, requiring three people for the labor-intensive process of gentle juice extraction. His wines ferment with native yeasts in stainless steel and neutral oak, with minimal sulfur use. Each grape variety is fermented separately and blended before bottling, reflecting his commitment to traditional, meticulous winemaking.
