From Critic to Maker: Domaine William KELLEY

From one of today’s most influential Burgundy critics, William Kelley’s wines stands apart from traditional Burgundy producers through a set of deliberately contrarian yet carefully reasoned choices. He fully destems all grapes, using a vintage 1960s machine and even hand-scissors (pédicellé method) for his top cuvées, a technique associated with Lalou Bize-Leroy. All wines are aged in 100% new oak, but with very light toasting and long-seasoned fine-grain wood sourced from three specific barrel-makers. He further distinguishes himself with high-canopy trellising to counter Burgundy's warming temperatures, horse-drawn soil work, cool non-extractive fermentations, and an unusually long élevage of 18–36 months under reductive, no-racking conditions. Production is extremely tiny befitting the micro-négociant model. Given the scale, allocations are extremely limited and the wines are considered highly sought after relative to their appellation levels.
