Based in Écueil , Brice Allouchery took over winemaking responsibilities in 2018 after several years working alongside his father in the vineyard and cellar. Marking a new chapter, he began vinifying the family's plots and manages 3.8 hectares across the Premier Cru terroirs of Écueil and Sacy with his partner Mathilde, with Pinot Noir dominates his plantings at 3.2 hectares. The estate's vines average over 60 years old, originally planted by his grandfather, and Brice has converted the entire vineyard to organic farming.
In the cellar, Brice's philosophy centers on patience and letting terroir shine through minimal intervention. Fermentations occur naturally with indigenous yeasts, and the wines are most often raised in oak barrels. The wines age on total lees for many months in beautiful old barrels within a deep, cold cellar, allowing them to develop slowly and reveal the vibrant character of Écueil's terroir. With only minimal sulfur added and a single pumping after pressing, Brice crafts free and authentic Champagnes that are contemplative and deep, jumping out of the glass with a pure sense of place rather than flashiness.
