The Champagne is superbly long-aging but sadly most are drunk far too young. Dom Pérignon is best to be enjoyed when they are mature, as it has been made with a reductive style that usually takes a very long time to evolve in the bottle, in which it becomes tremendously refined and complex, thus the House holds back a small quantity from each vintage for further ageing - the "P2" (Plenitude 2) which is kept in the cellar for 12-15 years while the "P3" (Plenitude) arrives about 30 years after the vintage meaning it has spent over 20 years on its lees and reaching its maximum complexity and concentration.

On the palate, the wine is medium to full-bodied, with a fine but ebullient mousse, exceptional concentration and intensity, brisk acids and a long, expansive finish. This disgorgement is beautifully timed, capturing the wine in a phase of controlled opulence, and it is drinking beautifully today.

Although the 2000 doesn’t have the multi-dimensional personality or structure of the very best DPs, it does offer tremendous drinking pleasure today. Hints of pastry, baked apple and mint add nuance, with a touch of reduction that lends an added kick of freshness. Ultimately, the 2000 is a very drinkable and delicious Dom Pérignon.
