Chablis is the most northern wine producing region of Burgundy and only produces white wines from Chardonnay. Their wines are considered by some to be a separate region to that of Burgundy as Chablis has unique soil - Kimmeridgian limestone - which makes its wine extraordinarily sharp in minerality. Due to the cooler climate, wines produced in Chablis are also less fruity and higher in acidity than its counterparts. It is a region that many people overlook nowadays however they produce some of the best Chardonnay. Many of them are priced very reasonably and an excellent Chablis would not break your bank!
