Founded in 1999 by Celestino Gaspari, Zyme is known to produce fantastic lines of traditional amarone and is considered a regional leader of quality and innovation. His work all started when he began working alongside Giuseppe Quintarelli - who later became his father-in-law - for 12 years to acquire valuable winemaking experience and knowledge for this legendary winery. The winery produces highest quality classical Veneto red wines: Valpolicella, Ripasso and Amarone, and also unique blends of 15 different white and red grapes: Kairos and Harlequin which are full and fruitful wines that offer an extraordinary tasting experience. Production is limited and is not easily found in the market.

It was made with a blend of 11 red and 4 white grape varieties including Garganega, Trebbiano toscano, Sauvignon Blanc, Chardonnay, Corvina, Corvinone, Rondinella, Cabernet Sauvignon, Cabernet Franc, Merlot, Syraz, Teroldego, Croatina, Oseleta, Sangiovese, and Marzemino!
