🍾🌊Drappier Coffret Immersion: Cellar Aged vs. Sea Aged, Side by Side

A family house in Urville since 1808, Champagne Drappier is today run by three generations of the Drappier family, André, Michel and Hugo, alongside cellar master Elysé Brigandat. The house farms organically, uses among the lowest sulfur levels in Champagne, ferments with its own proprietary yeast strain, and was the first Champagne house to achieve carbon neutral status. Built on pinot noir and a minimal intervention philosophy that lets each vintage speak for itself, Drappier has earned a reputation as one of Champagne's most quietly innovative producers.
 
The House of Drappier innovates once again with the Coffret Immersion, a wooden casket holding two bottles of Brut Nature and Carte d’Or, one aged in the cellars and one immersed at sea. After several years of research, the House decided on October 4, 2020, to immerse 3,495 bottles of Brut Nature and Carte d’Or at a depth of 31 metres in the Bay of Lannion, in the Côtes d'Armor. The marine environment is less oxidizing for the wine, and its low light and constant water temperature offer excellent conservation conditions. In the summer of 2022, 912 bottles of Brut Nature and 1,369 bottles of Carte d’Or were brought back to the surface, and it is one of these that champagne lovers will taste and compare to the classic version, for a rare, direct, sensory journey through how sea and cellar shape the same wine differently.
