Domaine Paul Pillot is one of the reference addresses in Chassagne Montrachet, a family estate whose roots go back to the late nineteenth century and today is driven by the fourth generation, led by Thierry Pillot alongside his sister Chrystelle. From a traditional base built by Paul’s acquisitions of prime premier cru holdings such as Caillerets, La Romanee and Grandes Ruchottes, the domaine has evolved into a benchmark for precise, terroir focused white Burgundy that Burgundy lovers closely follow across vintages.
In the vineyards the team works along organic principles with meticulous attention to each parcel, keeping yields low and farming everything by hand to capture the fine nuances of Chassagne’s limestone and clay soils. In the cellar Thierry pursues a restrained, non-interventionist approach with long ageing on lees, modest new oak and a clear emphasis on energy, purity and mineral tension, resulting in wines that are vibrant in youth yet built to evolve gracefully in the cellar.

The 2023 Chassagne-Montrachet 1er Cru Clos Saint-Jean is one of the more immediate wines in the range, bursting with aromas of pear, apple blossom, nutmeg and vanilla pod, followed by a medium to full-bodied, ample and fleshy palate, concluding with chalky grip.
