If you are looking for excellent value whites from Burgundy, William Fevre of Chablis will undoubtedly satisfy everyone’s palate. Being one of the most established and renowned estates in Chablis since 1959, Domaine William Fevre was sold to Maisons et Domaines Henriot in 1998, and now owns around 78 hectares of vineyards, including 15.9 hectares of Premier Crus, 15.2 hectares of Grand Crus which consist of 6 out of 7 Grand Cru appellations, and also produce village wines. Over the years, they have continuously maintained very high quality from village level to Grand Cru. The grapes are harvested by hand and carefully sorted through to ensure the best quality input into the wines. By using an average age of 6 years old barrels, it helps to preserve the freshness and minerality, at the same time aims to finely express the subtle variations in Chablis. Also worth noting is that William Fevre has been practicing sustainable growing in its vineyards for nearly 10 years now, and it obtained the highest level of environmental certification - “High Environmental Value” (HVE) status - in France in 2015.

Here too the elegance of the nose is simply stunning with a layered and perfumed aromatic profile trimmed in an almost invisible touch of oak that allows it to ooze Chablis character and in particular, a fine minerality that continues onto the impressively concentrated and palate staining flavors that possess striking precision on the explosively long and bone dry finish. This is a great Les Clos that will make old bones.

The reflections are the classic light gold-green hues of a fine Chablis. The barest touch of oak highlights the green fruit, menthol, saline and iodine aromas that precede the extremely stony, concentrated and driving flavors that are also blessed with ample amounts of dry extract that provides a much needed balancing element to the ripe acid backbone on the chalky and sappy finish. When Valmur is really good, it rivals Les Clos for the best grand cru in Chablis and this 2008 is really good.

It will not surprise lovers of this wine that in the 2+ years that have passed since I last reviewed this wine from bottle, not a great deal has changed. As such, it seems appropriate to simply repeat that review here: This would be almost impossible to miss this wine's origins as the marine influence on the pungently mineral, airy and superbly elegant nose is extremely strong with Chablis character to burn. The seductive middle weight flavors brim with dry extract, which does a perfect job of buffering the structural elements on the mouth coating and sappy finish that seems to go on and on. This is very Preuses in its Zen-like sense of harmony and is clearly very classy juice. I would add however that this seems a bit further along than the Vaulorent and actually could be enjoyed now even though it's still definitely on the way up.
