Nestled in the heart of Chassagne-Montrachet, Domaine Lamy-Caillat is a micro-domaine renowned for its meticulous craftsmanship and exceptional white wines. Established in 2011 by the passionate duo Sébastien Caillat and Florence Lamy, this tiny estate spans just 1.2 hectares. The couple took over these precious vineyards from an elderly neighbor, aiming to preserve and enhance the unique terroirs of the region.
 
Florence Lamy, daughter of renowned winemaker René Lamy, and her husband Sébastien, who also manages the family’s larger Domaine Lamy-Pillot, sought to create something distinctly artisanal and minimally processed with Domaine Lamy-Caillat. Their approach is rooted in a deep respect for traditional methods and a commitment to organic viticulture, although they have chosen not to pursue certification.
 
Domaine Lamy-Caillat exclusively produces white wines from Chardonnay, focusing on premier cru and village appellations. Their vineyards, including notable plots like Les Caillerets, La Romanée, and Les Champs Gains, benefit from careful, organic farming practices that emphasize the natural expression of each site.
 
The winemaking process at Domaine Lamy-Caillat is both natural and traditional. The grapes are pressed using an old mechanical press, and the juice undergoes a slow fermentation in barrels, maintaining most of the solids with minimal settling. The wines are aged for an extended period, spending up to 28 months on their lees in cold cellars, which enhances their complexity and depth. This long élevage, combined with minimal intervention, results in wines that are fined but never filtered, and bottled by hand to preserve their purity.
